- 4 boneless skinless chicken breasts
- 2 large sweet potatoes, peeled and cubed
- 1 pound green beans, trimmed
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 2 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F.
- In a small bowl, whisk together honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper until well combined.
- Place chicken breasts in a shallow dish and pour half of the marinade over them, turning to coat evenly. Marinate for at least 30 minutes or up to 8 hours in the refrigerator.
- Spread cubed sweet potatoes on a lined baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat.
- Remove baking sheet from oven and push sweet potatoes to one side. Place marinated chicken on the other side along with green beans. Drizzle remaining marinade over chicken.
- Return baking sheet to oven and bake for 20-25 minutes or until chicken is cooked through and reaches an internal temperature of 165°F.
