  • 4 boneless skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. In a small bowl, whisk together honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper until well combined.
  3. Place chicken breasts in a shallow dish and pour half of the marinade over them, turning to coat evenly. Marinate for at least 30 minutes or up to 8 hours in the refrigerator.
  4. Spread cubed sweet potatoes on a lined baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat.
  5. Remove baking sheet from oven and push sweet potatoes to one side. Place marinated chicken on the other side along with green beans. Drizzle remaining marinade over chicken.
  6. Return baking sheet to oven and bake for 20-25 minutes or until chicken is cooked through and reaches an internal temperature of 165°F.

Notes
