Ingredients
- 1 pound boneless skinless chicken breasts
- 2 tablespoon honey
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 square wonton wrappers
- 1 can (15 ounce) black beans, drained and rinsed
- 1 avocado, diced
- 1 medium tomato, diced
- 1/2 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1 ripe avocado for crema
- 1/2 cup sour cream or Greek yogurt
- 1 tablespoon lime juice for crema
- 1/4 teaspoon salt for crema
Instructions
1. In a bowl, combine the chopped chicken, honey, lime juice and zest, minced garlic, chili powder, cumin, salt, and pepper. Toss everything together until the chicken is evenly coated. Cover and let the chicken marinate for at least 20 minutes, or up to 2 hours for maximum flavor absorption.
2. Heat a skillet over medium heat. Cook the marinated chicken for 6-8 minutes, stirring occasionally, until fully cooked through and edges are browned.
3. To create crispy wonton taco shells, heat oil in a deep skillet or pot over medium-high heat. Carefully fold each wonton wrapper into a taco shape using tongs, and gently lower it into the hot oil. Fry for 1-2 minutes on each side until golden brown and crispy. Drain on paper towels.
4. In a blender or small food processor, combine the ripe avocado, sour cream (or Greek yogurt), lime juice, and a pinch of salt. Blend until smooth and creamy.
5. To assemble the tacos, place a generous portion of the cooked honey lime chicken inside each crispy wonton shell. Top with black beans, diced avocado, tomato, red onion, and fresh cilantro. Drizzle with the creamy avocado crema.
