  • ½ cup BBQ sauce (plus extra for drizzling)
  • 2 tablespoon hot honey (plus extra for drizzling)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup red onion, finely chopped
  • ¼ cup bell pepper, finely chopped
  • 4 large flour tortillas
  • 1 tablespoon olive oil or butter
  • Optional: fresh cilantro, sour cream for serving

Instructions

  1. In a bowl, combine the shredded chicken with ½ cup of BBQ sauce and 2 tablespoon of hot honey. Mix the ingredients together until the chicken is evenly coated.
  2. Heat the olive oil or butter in a skillet over medium heat. Sauté the red onion and bell pepper for 2-3 minutes, or until they’re softened. Add the sautéed vegetables to the chicken mixture and stir to combine.
  3. Lay a flour tortilla flat on a clean surface. Sprinkle the cheddar cheese on one half of the tortilla. Top the cheese with the hot honey BBQ chicken mixture, spreading it evenly. Drizzle additional BBQ sauce and hot honey over the chicken. Finally, sprinkle the mozzarella cheese over the top. Fold the tortilla in half to create a half-moon shape.
