Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 cup ripe peach chunks
- 1 jalapeno pepper, seeded and minced
- 1/4 cup olive oil
- 2 tablespoon honey
- 2 tablespoon soy sauce
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. In a mixing bowl, whisk together the olive oil, honey, soy sauce, minced garlic, salt, and black pepper to create the marinade.
2. Add the cubed chicken and peach chunks to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes or up to 2 hours.
3. Preheat the grill to medium-high heat.
4. Thread the marinated chicken and peach pieces onto skewers, alternating between them.
5. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F and the peaches are caramelized.
