- 1 large head cauliflower
- 4 ounce cream cheese
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 to 3 jalapeños
- 6 strips bacon
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Optional: Chopped green onions for garnish
Instructions
- Preheat your oven to 375°F. Grease a 9×13-inch baking dish.
- Steam or boil the cauliflower florets until they are tender, about 8 to 10 minutes. Drain the cauliflower well and pat it dry with paper towels.
- In a large bowl, combine the softened cream cheese, cheddar cheese, sour cream, diced jalapeños, half of the crumbled bacon, garlic powder, salt, and pepper. Mix everything together until well incorporated.
- Add the cooked cauliflower to the cheese mixture and stir gently until evenly coated.
- Transfer the mixture to the prepared baking dish. Top with shredded mozzarella cheese, grated Parmesan cheese, and the remaining crumbled bacon.
- Bake in the preheated oven for 20 to 25 minutes, or until the top is bubbly and golden brown.
- Allow to rest for 5 minutes before serving. Garnish with chopped green onions if desired.
