Description

Jalapeno Popper Cauliflower Casserole is a delightful fusion of two beloved dishes – the classic jalapeno popper and the versatile cauliflower casserole. This recipe takes the creamy, spicy flavors of jalapeno poppers and combines them with the nutritional benefits of cauliflower for a satisfying and indulgent dish.

  • 1 large head cauliflower
  • 4 ounce cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 to 3 jalapeños
  • 6 strips bacon
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: Chopped green onions for garnish

Instructions

  1. Preheat your oven to 375°F. Grease a 9×13-inch baking dish.
  2. Steam or boil the cauliflower florets until they are tender, about 8 to 10 minutes. Drain the cauliflower well and pat it dry with paper towels.
  3. In a large bowl, combine the softened cream cheese, cheddar cheese, sour cream, diced jalapeños, half of the crumbled bacon, garlic powder, salt, and pepper. Mix everything together until well incorporated.
  4. Add the cooked cauliflower to the cheese mixture and stir gently until evenly coated.
  5. Transfer the mixture to the prepared baking dish. Top with shredded mozzarella cheese, grated Parmesan cheese, and the remaining crumbled bacon.
  6. Bake in the preheated oven for 20 to 25 minutes, or until the top is bubbly and golden brown.
  7. Allow to rest for 5 minutes before serving. Garnish with chopped green onions if desired.
