Description

  • 4 pieces boneless skinless chicken thighs
  • 2 tablespoon jerk seasoning
  • 1 tablespoon olive oil
  • 1 mango, diced
  • 2 cup cabbage, shredded
  • 1 red bell pepper, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoon honey

Instructions

  1. Preheat the grill to medium-high, around 400°F.
  2. Rub the chicken thighs evenly with the jerk seasoning and olive oil, ensuring they are well coated.
  3. Place the seasoned chicken on the preheated grill and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F.
  4. In a large bowl, combine the diced mango, shredded cabbage, sliced red bell pepper, and chopped cilantro. Toss gently to mix.
  5. In a separate bowl, whisk together the mayonnaise, honey, lime juice, salt, and black pepper until smooth.
  6. Pour the honey lime dressing over the mango slaw and toss to coat evenly.
  7. Slice the grilled jerk chicken and arrange it over the mango slaw. Drizzle with additional honey lime cream, if desired.

Notes

Allowing the chicken to marinate in the jerk seasoning for at least 30 minutes will enhance flavor.
