Description
A delicious low-carb casserole made with ground beef, mushrooms, and creamy cheddar cheese.
Ingredients
- 1 pound ground beef
- 2 cup sliced mushrooms
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup beef broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- Olive oil for cooking
Instructions
1. Preheat your oven to 375°F.
2. In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened, about 3-5 minutes.
3. Add the ground beef to the skillet and cook, breaking it up with a wooden spoon, until it’s browned and cooked through, about 7-10 minutes. Drain any excess fat from the pan.
4. Stir in the sliced mushrooms, beef broth, heavy cream, thyme, salt, and pepper. Let the mixture simmer for 5-7 minutes, or until the mushrooms are tender.
5. Transfer the beef and mushroom mixture to a greased 9×9-inch baking dish. Top with the shredded cheddar cheese. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
6. Allow the casserole to cool slightly before serving.
Notes
For best flavor, use ground beef that is at least 80% lean.
Opt for fresh mushrooms for a more robust flavor.
Experiment with different cheese varieties to suit your taste.
