Ingredients
- 8 slices Swiss cheese
- 8 ounce sliced corned beef (or pastrami)
- 1 cup sauerkraut, drained and squeezed very dry
- 1/2 cup mayonnaise
- 2 tablespoon sugar-free ketchup
- 1 tablespoon sugar-free dill pickle relish
- 1 teaspoon minced onion
- 1/4 teaspoon paprika
- 1 teaspoon Worcestershire sauce (optional)
Instructions
- Preheat your oven to 375°F and line a large baking sheet with parchment paper.
- In a small bowl, whisk together the mayonnaise, sugar-free ketchup, pickle relish, minced onion, paprika, and Worcestershire sauce (if using). Set the dressing aside.
- Arrange the Swiss cheese slices on the prepared baking sheet, leaving some space between them. Bake for 6 to 8 minutes, until the cheese is melted, bubbly, and the edges are starting to brown.
- Once the cheese is baked, let it cool for 30 to 60 seconds, just until it’s flexible but not runny. Spread a thin layer of the dressing over each cheese slice, then add a layer of corned beef and a small pinch of sauerkraut.
- Tightly roll up each cheese-and-filling stack, placing the seam-side down. Allow the roll-ups to cool for a few minutes to help them crisp up even further.
