Description

Keto Crispy Reuben Roll-Ups are a fantastic way to satisfy your cravings for a classic Reuben sandwich while staying true to your low-carb lifestyle. With their irresistible combination of savory, tangy, and crispy flavors, these roll-ups are sure to become a new favorite in your keto repertoire.

  • 8 slices Swiss cheese
  • 8 ounce sliced corned beef (or pastrami)
  • 1 cup sauerkraut, drained and squeezed very dry
  • 1/2 cup mayonnaise
  • 2 tablespoon sugar-free ketchup
  • 1 tablespoon sugar-free dill pickle relish
  • 1 teaspoon minced onion
  • 1/4 teaspoon paprika
  • 1 teaspoon Worcestershire sauce (optional)

Instructions

  1. Preheat your oven to 375°F and line a large baking sheet with parchment paper.
  2. In a small bowl, whisk together the mayonnaise, sugar-free ketchup, pickle relish, minced onion, paprika, and Worcestershire sauce (if using). Set the dressing aside.
  3. Arrange the Swiss cheese slices on the prepared baking sheet, leaving some space between them. Bake for 6 to 8 minutes, until the cheese is melted, bubbly, and the edges are starting to brown.
