Description

Lazy Girl Pecan Pie Bars are an easy, delicious twist on the classic pecan pie. With a buttery crust, sweet syrupy filling, and crunchy pecans, these bars are the perfect dessert for any occasion. Ideal for holidays or as a sweet snack, they’re quick to make and absolutely irresistible.

Ingredients

Scale

For the Crust:

  • 3 cups all-purpose flour

  • ½ cup granulated sugar

  • 2 sticks (1 cup) unsalted butter, chilled and cubed

  • ½ teaspoon salt

For the Filling:

  • 4 large eggs

  • 1 ½ cups light corn syrup (or substitute with maple syrup)

  • 1 cup packed brown sugar

  • 2 teaspoons vanilla extract

  • 2 cups pecan halves

  • ¼ teaspoon salt

Instructions

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  2. Make the Crust: In a bowl, combine the flour, sugar, and salt. Cut in the chilled butter until the mixture becomes crumbly. Press the mixture evenly into the bottom of the prepared baking dish.

  3. Bake the Crust: Bake for 15 minutes, then remove from the oven.

  4. Prepare the Filling: In a separate bowl, whisk together the eggs, corn syrup, brown sugar, vanilla extract, and salt. Stir in the pecans until evenly distributed.

  5. Assemble & Bake: Pour the filling mixture over the crust and spread evenly. Bake for 30-35 minutes, or until the filling is set and slightly golden.

  6. Cool & Slice: Let the bars cool completely in the baking dish before cutting into squares. Serve and enjoy!

Notes

  • For a richer flavor, you can substitute maple syrup for the light corn syrup.

  • Make sure the crust is firm before adding the filling to prevent it from becoming soggy.

  • Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
