Ingredients

  • 1 1/2 pound boneless skinless chicken breast
  • 2 tablespoon olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cup cooked rice
  • 3 cup broccoli florets

Instructions

  1. Toss the chicken pieces with olive oil, lemon juice, lemon zest, minced garlic, oregano, paprika, salt, and pepper. Marinate for 15 to 30 minutes in the refrigerator.
  2. Heat a skillet over medium-high heat and cook the marinated chicken for 6 to 8 minutes, stirring occasionally, until browned and cooked through.
  3. While the chicken is cooking, prepare the sides by cooking the rice according to package instructions and steaming or roasting the broccoli until tender-crisp.
  4. Divide the cooked chicken and sides evenly among 4 meal prep containers and spoon any pan juices over the top.
