Instructions
- Start by cooking the broccoli rice in the microwave according to the package instructions. Using a fine strainer, drain the excess liquid and squeeze out as much moisture as possible.
- Preheat your oven to 400°F and line a large baking sheet with parchment paper.
- In a mixing bowl, combine the cooked broccoli rice, shredded cheddar cheese, egg, almond flour, garlic salt, and black pepper. Mix the ingredients thoroughly until well-incorporated.
- Scoop out about 16 small balls from the mixture and place them evenly on the prepared baking sheet. Gently flatten each ball with your hands to create discs.
- Bake the Low Carb Broccoli Cheese Rounds in the center rack of your preheated oven for approximately 15 minutes or until they start to brown. Flip the rounds and continue baking for an additional 8-10 minutes, or until they reach your desired level of crispiness.
