- 2 pound ground beef
- 1 cup breadcrumbs or crushed Ritz crackers
- 2 large eggs
- 1/2 cup chopped onion

- 1/2 cup ketchup
- 1/2 cup BBQ sauce
- 8 ounce elbow macaroni
- 2 cup milk
- 10.5 ounce condensed cheddar cheese soup
- 3 tablespoon butter
- 3 tablespoon all-purpose flour
- 3 cup shredded cheddar cheese, divided
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat oven to 350°F and grease a 9×13 inch baking dish.
- In a large bowl, combine the ground beef, breadcrumbs, eggs, chopped onion, garlic, Worcestershire sauce, salt, and pepper. Mix well until fully incorporated.
- Press the meatloaf mixture evenly into the prepared baking dish. Spread the ketchup and BBQ sauce over the top of the meatloaf, and then bake for 30 minutes.
- While the meatloaf is baking, cook the macaroni according to the package instructions until al dente. Drain and set aside.
- In a large pot, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually add the milk while whisking constantly until smooth. Stir in the condensed cheddar cheese soup. Add 2 cup of the shredded cheddar cheese and stir until melted. Season with salt, pepper, paprika, garlic powder, and onion powder.
- Stir the cooked macaroni into the cheese sauce until well coated. Remove the partially baked meatloaf from the oven and spread the mac and cheese mixture evenly over the top. Sprinkle the remaining 1 cup of shredded cheddar cheese on top.
- Return the casserole to the oven and bake for an additional 17-20 minutes, or until the cheese is melted and bubbly. Let sit for 5 minutes before serving to allow layers to set.
Notes
To ensure your Mac and Cheese Meatloaf Casserole turns out perfectly, choose a blend of 80/20 or 85/15 ground beef for moisture and flavor. You can also customize the cheese sauce with other melty cheeses like Monterey Jack or Gruyère.
