Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage (mild or spicy)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 2 celery stalks, diced
- 1 can (14.5 ounce) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- 4 cup chicken broth
- 1 cup orzo pasta
- 3 cup fresh spinach, chopped
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese
Instructions
1. Heat the olive oil in a large pot over medium heat. Add the Italian sausage and cook, breaking it up into crumbles, until it’s browned and cooked through. Drain any excess fat from the pot.
2. Add the diced onion, garlic, carrot, and celery to the pot. Sauté the vegetables for about 5 minutes, or until they’re softened and fragrant.
3. Stir in the diced tomatoes, oregano, basil, and red pepper flakes (if using). Cook for an additional 2 minutes, allowing the flavors to meld together.
4. Pour in the chicken broth and bring the mixture to a boil. Once boiling, add the orzo pasta and cook according to the package instructions, usually about 8-10 minutes, until the pasta is al dente.
5. Gently stir in the chopped spinach and cook for another 2 minutes, or until the spinach is wilted.
6. Season the soup with salt and pepper, to taste.
