  • 3 medium zucchini
  • 1 pint cherry tomatoes
  • 1 medium red onion
  • 4 cloves garlic
  • 1/3 cup Kalamata olives
  • 2 tablespoon olive oil
  • 2 tablespoon lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 4 ounce feta cheese
  • 1 cup shredded mozzarella

Instructions

  1. Preheat oven to 400°F and lightly oil a 9×13-inch baking dish.
  2. In a large bowl, toss the chicken, zucchini, tomatoes, onion, garlic, and olives with the olive oil, lemon juice, oregano, thyme, paprika, salt, and pepper until evenly coated.
  3. Spread the seasoned mixture evenly in the prepared baking dish.
  4. Bake uncovered for 25 minutes.
  5. Sprinkle crumbled feta cheese and mozzarella over the top and return to the oven for an additional 10 minutes or until chicken reaches an internal temperature of 165°F and vegetables are tender.
