- 1/3 cup Kalamata olives

- 2 tablespoon lemon juice
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and black pepper to taste
- 4 ounce feta cheese
- 1 cup shredded mozzarella
Instructions
- Preheat oven to 400°F and lightly oil a 9×13-inch baking dish.
- In a large bowl, toss the chicken, zucchini, tomatoes, onion, garlic, and olives with the olive oil, lemon juice, oregano, thyme, paprika, salt, and pepper until evenly coated.
- Spread the seasoned mixture evenly in the prepared baking dish.
- Bake uncovered for 25 minutes.
- Sprinkle crumbled feta cheese and mozzarella over the top and return to the oven for an additional 10 minutes or until chicken reaches an internal temperature of 165°F and vegetables are tender.
- Let the dish rest for 5 minutes before garnishing with fresh basil or parsley.
