Ingredients
- 1 cup graham cracker crumbs
 - 3 tablespoon sugar
 - 1/4 cup melted butter
 - 8 ounce cream cheese, softened
 - 1/2 cup powdered sugar
 - 1 teaspoon vanilla extract
 - 1/4 cup sour cream
 - 1/2 cup semi-sweet chocolate chips, melted
 - 1 egg
 - 1/4 cup semi-sweet chocolate chips, for drizzling
 
Instructions
1. Preheat your oven to 325°F.
2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter until it resembles wet sand. Press into mini muffin tins.
3. In another bowl, beat the cream cheese until smooth. Add powdered sugar, vanilla extract, sour cream, melted chocolate chips, and egg. Mix until silky.
4. Pour the cheesecake filling over the crust in each muffin tin, filling them about three-quarters full.
5. Bake for 15-20 minutes until centers are set but slightly jiggly. Cool completely.
6. Drizzle with remaining melted chocolate chips and garnish with whipped cream and mini chocolate shavings or sprinkles.
Notes
Make sure your cream cheese is softened for a smooth filling.
Don’t overmix to avoid cracks.
Be careful not to overbake; they should jiggle slightly when removed from the oven.
Refrigerate leftovers in an airtight container for up to 5 days.
