Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, lightly beaten
  • 1 cup breadcrumbs (panko or regular)
  • 2 tablespoon olive oil
  • 6 tablespoon unsalted butter
  • 6 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • 2 tablespoon heavy cream
  • Salt and black pepper to taste

Instructions

  1. Begin by seasoning the chicken breasts with salt and black pepper. Set up three shallow bowls: one with the seasoned flour mixture (flour, garlic powder, onion powder, salt, and pepper), one with the beaten eggs, and one with the breadcrumbs.
  2. Dredge each chicken breast in the seasoned flour, then dip it in the beaten eggs, and finally, coat it with the breadcrumbs, pressing gently to help them adhere.
  3. In a large skillet, heat the olive oil and 2 tablespoon of butter over medium heat. Cook the chicken for 4-5 minutes per side, until it’s golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, melt the remaining 4 tablespoon of butter. Add the minced garlic and sauté for 1-2 minutes, until fragrant. Stir in the chicken broth and lemon juice, and let the mixture simmer for 2-3 minutes. Finally, add the heavy cream and stir until the sauce thickens slightly.
  5. You can either return the chicken to the skillet and spoon the garlic butter sauce over the top, or simply plate the chicken and drizzle the sauce over it. Garnish with freshly chopped parsley and serve immediately.
