- 1 box (17.3 ounce) puff pastry (2 sheets), thawed
- 2 tablespoon olive oil
- 1 medium yellow onion, finely diced
- 16 ounce cremini mushrooms, finely diced
- 3 to 4 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cup shredded sharp cheddar cheese
- 1 egg, beaten (for egg wash)
- Optional: 1/2 teaspoon dried thyme
- Optional: Chopped parsley (for serving)
Instructions
- Preheat your oven to 400°F and grease a mini muffin pan.
- Heat the olive oil in a skillet over medium-high heat. Add the diced onion and cook for 3 minutes. Then, add the diced mushrooms, salt, pepper, and thyme if using, and cook until the mushrooms release their liquid and it evaporates, about 8 to 10 minutes. Finally, stir in the minced garlic and cook for 30 seconds. Remove from heat and let the mixture cool for 5 minutes before stirring in the shredded cheese.
- Unfold the puff pastry sheets and lightly roll them out to even them up. Cut each sheet into 9 squares, giving you a total of 18 squares.
- Press one pastry square into each mini muffin cup, forming a little “cup.” Spoon about 1 to 1 1/2 tablespoon of the mushroom-cheese mixture into each pastry cup. Brush the exposed pastry edges with the beaten egg.
- Pop the filled puff pastry bites into the oven and bake for 15 to 18 minutes, until the pastry is puffed and golden brown.
- Allow the Mushroom Cheese Puff Bites to cool for 5 minutes, then gently remove them from the muffin tin. Garnish with chopped parsley, if desired, and serve warm.
