  • 1 box (17.3 ounce) puff pastry (2 sheets), thawed
  • 2 tablespoon olive oil
  • 1 medium yellow onion, finely diced
  • 16 ounce cremini mushrooms, finely diced
  • 3 to 4 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cup shredded sharp cheddar cheese
  • 1 egg, beaten (for egg wash)
  • Optional: 1/2 teaspoon dried thyme
  • Optional: Chopped parsley (for serving)

Instructions

  1. Preheat your oven to 400°F and grease a mini muffin pan.
  2. Heat the olive oil in a skillet over medium-high heat. Add the diced onion and cook for 3 minutes. Then, add the diced mushrooms, salt, pepper, and thyme if using, and cook until the mushrooms release their liquid and it evaporates, about 8 to 10 minutes. Finally, stir in the minced garlic and cook for 30 seconds. Remove from heat and let the mixture cool for 5 minutes before stirring in the shredded cheese.
  3. Unfold the puff pastry sheets and lightly roll them out to even them up. Cut each sheet into 9 squares, giving you a total of 18 squares.
  4. Press one pastry square into each mini muffin cup, forming a little “cup.” Spoon about 1 to 1 1/2 tablespoon of the mushroom-cheese mixture into each pastry cup. Brush the exposed pastry edges with the beaten egg.
  5. Pop the filled puff pastry bites into the oven and bake for 15 to 18 minutes, until the pastry is puffed and golden brown.
  6. Allow the Mushroom Cheese Puff Bites to cool for 5 minutes, then gently remove them from the muffin tin. Garnish with chopped parsley, if desired, and serve warm.
