Ingredients
- 1 1/2 pound baby potatoes
- 2 tablespoon olive oil
- 2 tablespoon Dijon mustard
- 2 tablespoon whole grain mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup fresh chopped parsley
Instructions
1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
2. In a large bowl, whisk together the olive oil, Dijon mustard, whole grain mustard, garlic powder, onion powder, salt, and pepper.
3. Add the halved baby potatoes to the bowl and toss them gently to ensure they are evenly coated.
4. Spread the coated potato halves, cut side down, on the prepared baking sheet.
5. Roast the potatoes for 30-35 minutes, or until they are golden brown and crispy.
6. Once out of the oven, sprinkle with fresh chopped parsley and serve warm.
