Ingredients
- 1 pound ground beef (80/20 mix)
- 1 cup diced onion
- 2 cloves garlic, minced
- 8 ounce short pasta (rotini or penne)
- 1 can (14.5 ounce) diced tomatoes
- 1 cup beef broth
- 1/4 cup ketchup
- 2 tablespoon mustard
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 32 ounce frozen tater tots
Instructions
1. Preheat your oven to 400°F.
2. In a large, oven-safe skillet, cook the ground beef over medium heat for 5-7 minutes, breaking it up as it cooks. Drain any excess fat.
3. Add the diced onion to the skillet and sauté for 3 minutes. Stir in the minced garlic and cook for an additional minute.
4. Incorporate the uncooked pasta, diced tomatoes, beef broth, ketchup, mustard, smoked paprika, oregano, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes until pasta is tender.
5. Remove from heat and stir in the cheddar and mozzarella cheeses until melted.
6. Arrange the frozen tater tots in a single layer on top of the pasta mixture.
7. Bake in the preheated oven for 20-25 minutes until tater tots are golden-brown and crispy.
Notes
Optional garnishes: sliced green onions and chopped pickles. Consider using ground turkey for a leaner option or vegetarian alternatives like sautéed mushrooms.
