Ingredients
- 12 ounce smoked kielbasa, sliced into ½-inch rounds
- 1 pound baby red or Yukon gold potatoes, cut into bite-sized pieces
- 1 cup green beans, trimmed
- 1 large bell pepper, sliced into strips
- 1 medium onion, sliced
- 2 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
1. Preheat your oven to 400°F.
2. In a large mixing bowl or directly in the pan, combine the prepared potatoes, kielbasa, green beans, bell pepper, and onion.
3. Drizzle with olive oil and sprinkle with paprika, garlic powder, salt, and black pepper. Toss until evenly coated.
4. Spread the mixture evenly on a large baking sheet and roast for 25-30 minutes, stirring halfway through, until the potatoes are tender and golden, and the kielbasa is browned and crispy.

For stovetop method: Heat a large skillet over medium heat and add the seasoned mixture. Cook for 20-25 minutes, stirring occasionally.
