Description

A delicious, nutritious one-pan meal featuring tender chicken, fresh vegetables, and a medley of spices.


Ingredients

  • 1 pound boneless skinless chicken breast
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon Cajun seasoning
  • 1 onion, chopped
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 2 cup broccoli florets
  • 1 cup chicken stock
  • Fresh parsley, for garnish
  • Red chili pepper flakes, for garnish

Instructions

  1. In a large bowl, add the cubed chicken breast and season it with salt, pepper, garlic powder, and half the Cajun seasoning. Toss the chicken with 1 tablespoon of olive oil until each piece is evenly coated.
  2. Heat a large skillet over medium-high heat and add the remaining 1 tablespoon of olive oil. Add the seasoned chicken pieces and cook for 5-7 minutes, stirring occasionally, until cooked through and golden brown. Remove the chicken from the pan and set aside.
  3. In the same skillet, add more olive oil if needed, and sauté the onion for about 2 minutes until it begins to soften.
  4. Add the broccoli, zucchini, and bell pepper to the skillet. Season with the remaining Cajun seasoning, salt, and pepper. Cook on medium heat for about 5-6 minutes until tender but still crisp.
  5. Deglaze the pan with the chicken stock, scraping up any browned bits from the bottom. Add the cooked chicken back to the skillet and mix everything together for 2-3 more minutes.

Notes

Serve over rice or quinoa for a heartier meal or enjoy on its own for a light option. Garnish with fresh parsley and red chili pepper flakes for added flavor.
