- 1 pound boneless skinless chicken breast
- 2 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1 tablespoon Cajun seasoning
- 1 onion, chopped
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 2 cup broccoli florets
- 1 cup chicken stock
- Fresh parsley, for garnish
- Red chili pepper flakes, for garnish
Instructions
- In a large bowl, add the cubed chicken breast and season it with salt, pepper, garlic powder, and half the Cajun seasoning. Toss the chicken with 1 tablespoon of olive oil until each piece is evenly coated.
- Heat a large skillet over medium-high heat and add the remaining 1 tablespoon of olive oil. Add the seasoned chicken pieces and cook for 5-7 minutes, stirring occasionally, until cooked through and golden brown. Remove the chicken from the pan and set aside.
- In the same skillet, add more olive oil if needed, and sauté the onion for about 2 minutes until it begins to soften.
- Add the broccoli, zucchini, and bell pepper to the skillet. Season with the remaining Cajun seasoning, salt, and pepper. Cook on medium heat for about 5-6 minutes until tender but still crisp.
- Deglaze the pan with the chicken stock, scraping up any browned bits from the bottom. Add the cooked chicken back to the skillet and mix everything together for 2-3 more minutes.
Notes
Serve over rice or quinoa for a heartier meal or enjoy on its own for a light option. Garnish with fresh parsley and red chili pepper flakes for added flavor.
