Ingredients

  • 1 pound breakfast sausage
  • 8 large eggs
  • 1 cup milk
  • 1/4 cup maple syrup
  • 2 cups pancake mix
  • 1 cup shredded cheddar cheese (optional)
  • 1/2 teaspoon vanilla extract (optional)

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. Cook the breakfast sausage in a skillet over medium heat until browned and crumbly. Drain excess fat and set aside.

3. In a large bowl, whisk together eggs, milk, maple syrup, salt, and black pepper. Stir in vanilla extract if using.

4. Add pancake mix and stir until just combined, being careful not to overmix.

5. Add cooked sausage and shredded cheddar cheese to the pancake mixture, and stir gently.

6. Pour the mixture into the prepared baking dish and smooth the top with a spatula.

7. Bake for 35-40 minutes, or until the center is set and the top is golden brown.

8. Allow to cool slightly before slicing and serving.

Notes

Store leftovers in the refrigerator for up to 4 days.

Reheat by covering with foil and baking at 350°F (175°C) for 15-20 minutes.

Individual slices can be reheated in the microwave.
