  • 1/4 cup granulated sugar
  • 2 tablespoon all-purpose flour
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon

  • 2 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted and cooled slightly
  • 1 large egg
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/4 cup cold unsalted butter, cut into small cubes
  • 1/4 teaspoon ground cinnamon

Instructions

1. Preheat your oven to 375°F. Line a 12-cup muffin tin with liners or grease it well.

2. In a bowl, combine the diced peaches, sugar, flour, lemon juice, cinnamon, and nutmeg. Stir until well combined and set aside.

3. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk the melted butter, egg, buttermilk, and vanilla. Pour the wet ingredients into the dry ingredients and mix until just combined.

4. Spoon a bit of batter into each muffin cup (about 1/2 full), add a spoonful of the peach filling, then top with more batter until the cup are about 3/4 full.

5. In a small bowl, mix the flour, brown sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Sprinkle the streusel over the top of the muffins.

6. Bake the muffins for 18–22 minutes or until a toothpick inserted into the center comes out clean. Allow them to cool in the pan for 5 minutes before transferring to a wire rack.

7. These Peach Cobbler Muffins are best enjoyed warm or at room temperature.
