Ingredients
- 1 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
- 2 cup fresh peaches, peeled and diced
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 cup powdered sugar
- 2 tablespoon heavy cream or milk
- 1 teaspoon vanilla extract
Instructions
1. Preheat your oven to 350°F. Lightly grease a Twinkie or mini loaf pan.
2. In a saucepan over medium heat, combine the fresh peaches, 1/4 cup sugar, cornstarch, and lemon juice. Cook until thickened, about 5–7 minutes. Remove from heat and let cool.
3. In a bowl, whisk together the flour, baking powder, and salt. In another bowl, cream the butter and 1 cup sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Add the dry ingredients alternately with the milk, mixing just until combined.
4. Spoon a layer of batter into each cavity of the prepared pan, add a spoonful of peach filling, then cover with more batter.
5. Bake for 20–25 minutes, or until a toothpick inserted comes out clean. Allow to cool completely before removing from the pan.
6. In a small bowl, whisk together the powdered sugar, heavy cream (or milk), and vanilla until smooth. Drizzle over the cooled cakes and enjoy!
