Ingredients
- 2 chicken breasts
- ½ cup pesto
- 4 slices crusty bread
- 1 cup fresh spinach or arugula
- 1 medium tomato, sliced
- ½ cup mozzarella cheese, sliced
- 2 tablespoon olive oil
- Salt and pepper, to taste
Instructions
1. Season the chicken breasts with a pinch of salt and pepper. Heat the olive oil in a skillet over medium heat and cook the chicken for 5-6 minutes per side, or until fully cooked through. Once the chicken is done, let it rest for a few minutes before slicing.
2. While the chicken is cooking, lightly toast the bread slices until they’re golden and crisp.
3. Spread a generous amount of pesto on each slice of toasted bread. Layer the spinach or arugula, tomato slices, mozzarella cheese, and sliced chicken on one slice of bread. Top with the remaining slice to complete your Pesto Chicken Sandwich.
4. Gently press down on the sandwich to help it hold its shape. Serve warm or at room temperature.
