Description

Pierogi Sausage Skillet is a delightful one-pan meal that combines the comforting flavors of potato and cheese pierogis with savory smoked sausage, sautéed vegetables, and a touch of paprika. This easy-to-prepare dish is perfect for a quick weeknight dinner or a satisfying weekend feast.

  • 12 frozen potato and cheese pierogis
  • 1 pound smoked sausage, sliced
  • 1 medium onion, diced
  • 2 cup fresh baby spinach
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

1. Begin by heating 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set it aside.

2. In the same skillet, add another tablespoon of olive oil. Toss in the diced onion and sliced red bell pepper, and sauté for 4-5 minutes until they are softened.

3. Stir in the minced garlic and paprika, cooking for an additional minute until the aroma becomes irresistible.

4. Carefully add the frozen pierogis to the skillet, gently combining them with the onion and pepper mixture. Cook for about 7-10 minutes, allowing the pierogis to develop a nice golden-brown color, flipping them occasionally.

5. Once the pierogis are heated through and have a delightful crispness, return the cooked sausage to the skillet. Add the fresh baby spinach and toss all the ingredients together until the spinach wilts, about 2 minutes.

6. Finally, season the Pierogi Sausage Skillet with salt and pepper to taste. Remove the skillet from the heat, and serve the dish hot, garnished with fresh parsley if desired.


Notes

The Pierogi Sausage Skillet is an excellent dish for meal prepping and enjoying leftovers. Once the skillet has cooled completely, transfer the leftovers to an airtight container and refrigerate for up to 3-4 days.
