- 1 cup all-purpose flour
- 2 teaspoon baking powder
- 2 tablespoon granulated sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg

- 1 large egg, beaten
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 tablespoon vegetable oil
- 6–8 pineapple rings
- Vegetable oil for frying
- 1/4 cup granulated sugar (for coating)
- 1/2 teaspoon cinnamon (for coating)
Instructions
- If using canned pineapple, drain the rings thoroughly and pat them completely dry with paper towels. If using fresh pineapple, peel, core, and slice into 1/2-inch thick rings.
- In a medium bowl, whisk together the flour, baking powder, sugar, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the beaten egg, buttermilk, vanilla extract, and 1 tablespoon of vegetable oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick enough to coat a spoon, like heavy cream.
- Heat about 2 inches of vegetable oil in a large, heavy-bottomed pot or deep skillet over medium heat until it reaches 350°F. Test the oil’s readiness by dropping a small bit of batter in – it should sizzle and float immediately.
- Dip each pineapple ring into the batter, coating it completely and allowing any excess to drip off.
- Carefully lower the battered pineapple ring into the hot oil and fry for 1-2 minutes per side until golden brown. Fry 3-4 rings at a time, being careful not to overcrowd the pot.
- Transfer the fried pineapple fritters to a paper towel-lined plate to drain off any excess oil.
- In a small bowl, mix together the 1/4 cup of sugar and 1/2 teaspoon of cinnamon.
- While the fritters are still warm, toss them in the cinnamon-sugar mixture until evenly coated.
- Serve the pineapple fritters warm, optionally with a scoop of ice cream or a drizzle of your favorite syrup for an extra indulgent treat.
Notes
Using fresh pineapple will give you the best texture and flavor, but canned pineapple rings work just as well if you need a quick and convenient option.
