- 1 pound rotini pasta
- 2 cup sliced pepperoni
- 1 cup mozzarella pearls
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1 cup bell pepper, diced
- 1/2 cup red onion, diced
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil (optional)
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Cook the pasta according to the package instructions until al dente.
- Drain the pasta and rinse it under cold water to stop the cooking process.
- In a large bowl, combine the cooked pasta, pepperoni, mozzarella, tomatoes, olives, bell pepper, red onion, Parmesan, and fresh basil (if using).
- Pour the prepared dressing over the top and toss everything together until evenly coated.
- Refrigerate the salad for at least 30 minutes to allow the flavors to meld.
- Before serving, give the salad a final toss and adjust seasoning with additional salt and pepper if needed.
Notes
Pizza Pasta Salad can be made in advance and stored in the refrigerator for up to 5 days. Keep the dressing separate until just before serving to prevent sogginess.
