  • 1 pound rotini pasta
  • 2 cup sliced pepperoni
  • 1 cup mozzarella pearls
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1 cup bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil (optional)
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the pasta according to the package instructions until al dente.
  2. Drain the pasta and rinse it under cold water to stop the cooking process.
  3. In a large bowl, combine the cooked pasta, pepperoni, mozzarella, tomatoes, olives, bell pepper, red onion, Parmesan, and fresh basil (if using).
  4. Pour the prepared dressing over the top and toss everything together until evenly coated.
  5. Refrigerate the salad for at least 30 minutes to allow the flavors to meld.
  6. Before serving, give the salad a final toss and adjust seasoning with additional salt and pepper if needed.

Notes
