Instructions
1. Preheat your oven to 400°F.
2. Season the pork tenderloin with salt, pepper, garlic, paprika, and onion powder. Heat the olive oil in a skillet over medium-high heat, and sear the pork on all sides until browned, about 2-3 minutes per side.
3. Transfer the pork to the oven and roast until the internal temperature reaches 145°F. Remove from the oven and let the pork rest for 5 minutes.
4. While the pork rests, return the skillet to medium heat. Add the butter and lemon juice, then stir in the heavy cream and Dijon mustard. Bring the sauce to a gentle simmer, stir in the dried thyme, and season with salt and pepper to taste.
