Ingredients
- 2 tablespoon olive oil
- 2 cup diced potatoes
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 2 cloves garlic, minced
- 4 large eggs
- 1/4 cup milk
- 1 cup shredded cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh herbs for garnish
Instructions
1. In a large skillet, heat the olive oil over medium heat.
2. Add the diced potatoes, onion, and bell pepper to the hot pan. Sauté until the potatoes are golden and the veggies are tender, about 8-10 minutes. Stir in the minced garlic and cook for 1 minute more.
3. Pour in the whisked eggs mixed with milk. Cook gently, stirring occasionally, until softly scrambled.
4. Stir in the shredded cheese until melted and well combined.
5. Add salt and pepper to taste, then sprinkle fresh herbs over the top.
