Description

Pumpkin Oatmeal Cookies with Maple Frosting are the ultimate autumn indulgence. These soft, chewy cookies combine the comforting flavors of pumpkin and oats, perfectly complemented by a creamy maple-infused frosting.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 2 1/2 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3 cup old-fashioned rolled oats
  • 4 ounce cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cup powdered sugar
  • 2 tablespoon maple syrup
  • 1 teaspoon vanilla extract

Instructions

1. Preheat your oven to 350°F. Line baking sheets with parchment paper.

2. In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.

3. Mix in the eggs, vanilla, and pumpkin puree until well combined.

4. In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt. Gradually add the dry ingredients to the wet mixture.

5. Fold in the old-fashioned rolled oats until they are evenly distributed throughout the dough.

6. Drop the dough by rounded tablespoon onto the prepared baking sheets. Bake for 12–14 minutes, or until the edges are set and lightly golden.

7. Allow the cookies to cool completely on the baking sheets before frosting.

8. In a medium bowl, beat the cream cheese and butter until smooth and creamy.

9. Gradually add the powdered sugar, maple syrup, and vanilla extract, mixing until the frosting is light and fluffy.

10. Generously spread or pipe the Maple Frosting onto the cooled cookies.

Notes

Serve these cookies with a warm cup of apple cider or a cozy mug of pumpkin spice latte for the ultimate fall experience.
