Ingredients

  • 3 large avocados, peeled, pitted, and diced
  • 1 pint cherry tomatoes, halved
  • 1/2 medium red onion, finely diced
  • 1/2 cup fresh cilantro, roughly chopped
  • 1 large jalapeño, seeded and minced (optional)
  • 1/4 cup lime juice
  • 2 tablespoon extra virgin olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Instructions

1. Combine halved cherry tomatoes, finely diced red onion, minced jalapeño (if using), and chopped fresh cilantro in a large mixing bowl. Toss gently to distribute ingredients evenly.

2. In the same bowl, pour in fresh lime juice and extra virgin olive oil. Sprinkle in sea salt and freshly ground black pepper. Whisk until salt has dissolved and dressing is lightly emulsified.

3. Gently fold diced avocados into the tomato and onion mixture using a rubber spatula or large spoon. Be careful not to stir vigorously to avoid breaking down the avocado.

4. Taste the salad and adjust seasonings as needed, folding ingredients together one last time.

5. Serve immediately for best texture, color, and flavor.


Notes

Look for avocados that are slightly soft to the touch with dark green or black skin. Avoid rock-hard or overly soft avocados.

Cherry or grape tomatoes are ideal for this salad, but heirloom or other small tomato varieties can also be used for added flavor.
