- 8 ounce penne pasta
- 2 pound boneless skinless chicken breasts
- 2 tablespoon Cajun seasoning
- 2 tablespoon olive oil
- 2 tablespoon butter
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cup milk
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 jalapeños, sliced
- 1 cup grated Parmesan cheese
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup fresh cilantro (optional)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Drain and set aside.
- Cook the Chicken: Season the cubed chicken with Cajun seasoning. Heat 2 tablespoon of olive oil in a large skillet over medium-high heat. Cook the chicken until it reaches an internal temperature of 165°F, about 6-8 minutes, stirring occasionally. Remove the chicken from the skillet and set aside.
- Sauté the Vegetables: Add the remaining 2 tablespoon of olive oil to the same skillet. Sauté the bell peppers and jalapeños for 4-5 minutes, until they’ve softened slightly. Remove the vegetables from the skillet and set aside.
- Make the Sauce: Melt the butter in the skillet over medium heat. Add the onion and garlic, and cook for 5 minutes, stirring occasionally, until the onion is translucent. Whisk in the flour and cook for 1 minute. Gradually whisk in the milk, one cup at a time, until the sauce is smooth and thickened, about 5 minutes.
- Finish the Dish: Add the Cajun seasoning and red pepper flakes (if using) to the sauce and simmer for 5 minutes. Stir in the Parmesan cheese until melted. Add the cooked pasta, chicken, and vegetables to the sauce, tossing to combine.
- Serve: Garnish the Rattlesnake Pasta with fresh cilantro and enjoy!
Notes
For a seafood twist, consider adding shrimp or crab. Vegetarians can substitute chicken with tofu or sautéed mushrooms.
