  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Flour, for light coating
  • 2 tablespoon olive oil, plus a little extra if needed
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 8 ounce cremini mushrooms, sliced
  • 1/2 medium onion, chopped
  • 1 tablespoon Dijon mustard (or to taste)
  • 1 tablespoon Worcestershire sauce (or to taste)
  • 3 cloves garlic, minced
  • 2/3 cup chicken broth
  • 1/2 cup full-fat sour cream (room temperature)

Instructions

  1. Season the chicken pieces with garlic powder, salt, and black pepper. Lightly coat each piece in flour, shaking off the excess.
  2. Heat 2 tablespoon of olive oil in a deep skillet over medium-high heat. Brown half the chicken for 3-4 minutes per side until golden and cooked through, then transfer it to a plate. Repeat with the remaining chicken, adding a bit more oil if the pan becomes dry.
  3. In the same skillet, reduce the heat to medium and add 1 tablespoon of olive oil and the butter. Sauté the sliced mushrooms and chopped onion for 6-8 minutes, stirring occasionally, until they release their liquid, it evaporates, and the mushrooms are nicely browned.
  4. Stir in the Dijon mustard, Worcestershire sauce, and minced garlic. Cook for about 1 minute, allowing the aromas to bloom and meld together.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Return the browned chicken and any accumulated juices to the skillet and simmer for about 2 minutes, allowing the flavors to meld together.
  6. Reduce the heat to low and let the pan cool slightly, then stir in the full-fat sour cream until the sauce is smooth and creamy. Be careful not to let it boil, as this can cause the sour cream to curdle.
  7. Taste the Rich Chicken Stroganoff and adjust the seasoning with salt and pepper as needed.
  8. Serve hot over a bed of egg noodles, mashed potatoes, rice, or pasta.
