Ingredients
- 1 1/2 pound mini potatoes
- 3 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Preheat your oven to 425°F and line a baking sheet with parchment paper or lightly grease it.
2. Wash and dry the mini potatoes. If the potatoes are on the larger side, cut them in half.
3. In a large bowl, toss the potatoes with the olive oil, garlic powder, onion powder, dried rosemary, salt, and black pepper until they’re evenly coated.
4. Spread the seasoned mini potatoes in a single layer on the prepared baking sheet. Roast the potatoes for 25-30 minutes, tossing them halfway through, until they’re golden brown and crispy on the edges.
5. Once the roasted mini potatoes are fresh out of the oven, sprinkle them with a bit of fresh parsley for garnish. Serve them hot.
Notes
For extra crispiness, consider parboiling the potatoes for 10 minutes before roasting.
Experiment with different herbs and spices or add Parmesan cheese for added flavor.
