Ingredients
- 2 pounds Yukon Gold or baby potatoes
- 1 tablespoon olive oil
- 1 block of feta cheese
- 1 head of garlic
- 1 lemon, quartered
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt to taste
- Black pepper to taste
- Honey for drizzling
- Fresh basil for garnish
Instructions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, toss the cubed potatoes with 1 tablespoon of olive oil, dried thyme, oregano, salt, and black pepper.
3. Spread the seasoned potatoes on the prepared baking sheet, then nestle the block of feta cheese in the center. Place the head of garlic (cut side up) and lemon quarters around the potatoes. Drizzle the remaining 1 tablespoon of olive oil over the feta and garlic.
4. Slide the baking sheet into the preheated oven and roast for 30-35 minutes, until the potatoes are golden and crispy and the feta is soft.
5. Once out of the oven, squeeze the roasted garlic cloves into the potatoes and feta, mix gently, and drizzle with honey. Top with fresh, chopped basil.
Notes
To reduce the saltiness of the feta, soak it in water for 30 minutes before baking.
