Ingredients
- 2 pound baking potatoes
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounce feta cheese
- 1 head garlic
- 1 lemon
Instructions
1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
2. In a large bowl, toss the cubed potatoes with 1 tablespoon of olive oil, dried thyme, oregano, salt, and black pepper until evenly coated.
3. Spread the seasoned potatoes on the prepared baking sheet, then nestle the block of feta cheese in the center. Place the head of garlic (cut side up) and lemon quarters around the potatoes. Drizzle the remaining 1 tablespoon of olive oil over the feta and garlic.
4. Slide the baking sheet into the preheated oven and roast for 30-35 minutes until the potatoes are golden and crispy, and the feta cheese is soft and slightly browned.
5. Once out of the oven, gently squeeze the roasted garlic cloves out of their skins and mix them into the potatoes and feta. Drizzle with honey and top with fresh, chopped basil.
