- 2 large yellow onions
- 2 large red bell peppers
- 2 large orange bell peppers
- 2 large poblano peppers
- 1 medium fennel bulb
- 2 tablespoon minced garlic
- 1 teaspoon dried oregano
- 1 tablespoon kosher salt
- 1 1/2 teaspoon freshly ground black pepper
- 1/4 cup olive oil
- 2 tablespoon olive oil for sausages
- 1 pound sweet Italian sausage
- 1 pound hot Italian sausage
- 1 pint red cherry tomatoes
- 1/3 cup dry white wine
- 1/2 cup julienned fresh basil leaves
- Freshly grated Parmesan cheese for serving
Instructions
- Preheat oven to 400°F.
- In a large shallow roasting pan, combine the onions, bell peppers, poblano peppers, fennel, garlic, oregano, kosher salt, and black pepper. Drizzle with olive oil and toss until well-coated.
- On a sheet pan, toss the sausages with olive oil and spread them out in a single layer.
- Place both pans in the preheated oven and roast for 20 minutes.
- After 20 minutes, transfer the sausages to the roasting pan with the vegetables. Add the cherry tomatoes and pour in the white wine. Roast for another 25 to 30 minutes, turning the sausages occasionally.
- Once tender and caramelized, remove from the oven. Sprinkle fresh basil over the top, toss together, and adjust seasoning. Serve hot with freshly grated Parmesan cheese.
