- 1 pound chicken sausage
- 1 cup broccoli florets
- 2 cup bell peppers, sliced
- 1 medium red onion, wedged
- 1 pound baby potatoes, halved
- 2 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F.
- In a large bowl, combine chicken sausage, broccoli, bell peppers, red onion, and baby potatoes.
- Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss to coat evenly.
- Spread the mixture in a single layer on a large sheet pan.
- Roast in the oven for 25-30 minutes, stirring halfway through, until vegetables are tender and sausage is cooked through.
Notes
Serve with freshly chopped parsley for added brightness.
Can be prepared ahead of time by chopping vegetables and slicing sausage a day before cooking.
