  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 tablespoon olive oil (optional)
  • 2 cup fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano

Instructions

1. Preheat your oven to 375°F and lightly grease a baking dish.

2. Season the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika.

3. In a bowl, combine the chopped spinach, sun-dried tomatoes, crumbled feta, minced garlic, and dried oregano.

4. Butterfly each chicken breast by slicing it horizontally without cutting all the way through. Pound the chicken to an even thickness, then spoon the filling onto each breast. Roll tightly and secure with toothpicks if needed.

5. (Optional) Heat olive oil in a skillet over medium-high heat and sear the chicken seam-side down for 2-3 minutes. Flip and sear the other side for 1-2 minutes.

6. Place the rolled chicken in the prepared baking dish, seam-side down. Bake for 25-30 minutes or until the internal temperature reaches 165°F.
