Description

Rotisserie Chicken Broccoli Pasta is a creamy, cheesy one-pot wonder that is easy to make and delicious, perfect for weeknight meals.


Ingredients

  • 1 lb pasta
  • 4 cup chicken broth
  • 3 cup heavy cream
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 1/2 cup broccoli florets, chopped
  • 4 cup rotisserie chicken, chopped
  • 10.75 ounce cheddar cheese soup
  • 2 cup shredded sharp cheddar cheese
  • 1 cup grated Parmesan cheese

Instructions

  1. In a large pan, add the uncooked pasta, chicken broth, heavy cream, garlic powder, salt, and pepper. Place a lid on the pan and turn the heat to medium-high.
  2. Once the liquid begins to boil, remove the lid and allow the mixture to simmer for 5-6 minutes, stirring occasionally, until the pasta is al dente.
  3. Add the chopped broccoli to the pan and continue to simmer until the broccoli is tender-crisp and the pasta is fully cooked.
  4. Turn the heat down to low and stir in the chopped rotisserie chicken and cheddar cheese soup, mixing until evenly combined.
  5. Finally, add the shredded cheddar cheese to the pan and stir until melted and creamy.
  6. Taste and adjust the seasoning with additional salt and pepper if needed.
  7. Serve immediately, garnished with a sprinkle of extra Parmesan cheese if desired.

Choose short, sturdy pasta shapes like penne or rotini.

Adjust the creaminess by adding more or less heavy cream.
