Rotisserie Chicken Broccoli Pasta is a creamy, cheesy one-pot wonder that is easy to make and delicious, perfect for weeknight meals.
Ingredients
Scale
- 1 lb pasta
- 4 cup chicken broth
- 3 cup heavy cream
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 2 1/2 cup broccoli florets, chopped
- 4 cup rotisserie chicken, chopped
- 10.75 ounce cheddar cheese soup
- 2 cup shredded sharp cheddar cheese
- 1 cup grated Parmesan cheese
Instructions
- In a large pan, add the uncooked pasta, chicken broth, heavy cream, garlic powder, salt, and pepper. Place a lid on the pan and turn the heat to medium-high.
- Once the liquid begins to boil, remove the lid and allow the mixture to simmer for 5-6 minutes, stirring occasionally, until the pasta is al dente.
- Add the chopped broccoli to the pan and continue to simmer until the broccoli is tender-crisp and the pasta is fully cooked.
- Turn the heat down to low and stir in the chopped rotisserie chicken and cheddar cheese soup, mixing until evenly combined.
- Finally, add the shredded cheddar cheese to the pan and stir until melted and creamy.
- Taste and adjust the seasoning with additional salt and pepper if needed.
- Serve immediately, garnished with a sprinkle of extra Parmesan cheese if desired.
Notes
Choose short, sturdy pasta shapes like penne or rotini.
Adjust the creaminess by adding more or less heavy cream.
For gluten-free diners, use gluten-free pasta. Dairy-free eaters can substitute heavy cream with a plant-based alternative.
