Description
A delightful and nourishing one-pan dish packed with protein-rich chicken sausage, nutrient-dense vegetables, and savory flavors.
Ingredients
Scale
- 2 chicken sausages, sliced into coins
- 1 large sweet potato, peeled and cubed
- 1 small zucchini, halved and sliced
- 1 cup broccoli florets
- 1 tablespoon olive oil
- 1 tablespoon soy sauce or coconut aminos
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- Optional: grated parmesan or nutritional yeast for garnish
Instructions
- Start by boiling or microwaving the sweet potato slices until they are just tender, but not mushy. Drain and set aside.
- Heat the olive oil in a large skillet over medium-high heat. Add the sliced chicken sausage and cook until browned and crisped around the edges, about 5 minutes.
- Toss the broccoli, zucchini, and cooked sweet potatoes into the skillet with the sausage. Stir everything together to combine.
- Drizzle in the soy sauce or coconut aminos, and then sprinkle in the garlic powder, black pepper, and smoked paprika. Stir well to ensure the flavors are evenly distributed.
- Continue cooking the Sausage Veggie Skillet Bowl for 5 to 7 minutes, stirring occasionally, until the vegetables are tender-crisp and everything is heated through.
- Remove the skillet from the heat and transfer the Sausage Veggie Skillet Bowl to individual serving bowls. Garnish with a sprinkle of grated parmesan or nutritional yeast, if desired. Serve hot and savor every bite!
Notes
For a softer texture, steam the sweet potato slices instead of boiling them.
Feel free to swap in other seasonal produce, such as bell peppers, carrots, or asparagus.
The dish can be cooked in advance and stored in airtight containers in the refrigerator for up to 4 days.
