Description

Get ready to experience the ultimate in easy, flavorful dinners with this Sheet Pan Maple Dijon Pork Tenderloin! This one-pan wonder combines the savory-sweet perfection of maple and Dijon with tender, juicy pork tenderloin. It’s a weeknight lifesaver that delivers big on taste without the hassle.

Ingredients

Scale
  • 1 1/4 pound pork tenderloin
  • 2 tablespoon olive oil
  • 2 tablespoon maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

1. Preheat your oven to 425°F and line a rimmed sheet pan with parchment paper or foil for easy cleanup.

2. In a bowl, whisk together the olive oil, maple syrup, Dijon mustard, apple cider vinegar, rosemary, smoked paprika, garlic powder, salt, and pepper. This flavorful marinade will be the key to transforming your pork tenderloin into a masterpiece.

3. Next, rub about half of the marinade all over the pork tenderloin, ensuring it’s evenly coated. In a separate bowl, toss your chosen vegetables (such as apple wedges, sweet potato cubes, parsnip sticks, or red onion wedges) with the remaining marinade. Spread the marinated veggies on the sheet pan, leaving space in the center for the pork.

4. Place the pork tenderloin in the middle of the pan, then scatter the marinated vegetables around it. Roast everything in the preheated oven for 20-25 minutes, or until the pork reaches an internal temperature of 145°F.

5. Once the Sheet Pan Maple Dijon Pork Tenderloin is cooked to perfection, remove it from the oven and let the pork rest for 5 minutes. This resting period allows the juices to redistribute, ensuring your tenderloin is moist and flavorful. Slice the pork and serve it alongside the roasted vegetables, drizzling any delicious pan juices or extra glaze over the top.

Notes

For a gluten-free version, simply ensure that your Dijon mustard is labeled as gluten-free. The rest of the ingredients are naturally gluten-free, making this dish a great option for those with dietary restrictions.
