Ingredients
- 4 bone-in pork chops (1-inch thick)
- 2 pound baby potatoes, halved
- 2 tablespoon olive oil
- 2 tablespoon melted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
Instructions
1. Preheat your oven to 400°F.
2. Pat the pork chops dry with paper towels and season generously with salt and pepper.
3. Brush the pork chops with a mixture of melted butter and olive oil.
4. Toss the halved baby potatoes with minced garlic, rosemary, thyme, paprika, and a drizzle of olive oil.
5. Line a large baking sheet with parchment paper and arrange the pork chops on one side and the potatoes on the other.
6. Roast in the oven for 25-30 minutes until the pork reaches an internal temperature of 145°F and the potatoes are tender and golden.
7. For extra crispiness, broil for 2-3 minutes at the end of cooking time.
