Ingredients
- 1 pound shrimp, peeled and deveined
- 1 bunch asparagus, cut into 2-inch pieces
- 8 ounce mushrooms, sliced
- 3 tablespoon soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 2 tablespoon vegetable oil
- Salt and pepper, to taste
- Cooked rice or noodles, for serving
Instructions
1. Begin by peeling and deveining the shrimp if necessary. Trim the woody ends of the asparagus and cut the stalks into 2-inch pieces. Slice the mushrooms.
2. In a bowl, combine the shrimp with 1 tablespoon of soy sauce and a pinch of salt. Allow the shrimp to marinate for about 10 minutes.
3. Heat a large skillet or wok over medium-high heat and add the vegetable oil. Once shimmering, add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
4. Add the marinated shrimp to the pan and cook for 2-3 minutes until they start to turn pink.
5. Stir in the asparagus pieces and sliced mushrooms, cooking for another 3-5 minutes until the asparagus is tender-crisp and the mushrooms have softened.
6. Pour in the remaining 2 tablespoon of soy sauce and the optional 1 tablespoon of oyster sauce. Toss everything together to coat evenly.
7. Adjust seasoning with salt and pepper as needed. Drizzle sesame oil over the top before serving.
8. Serve immediately over steamed rice or noodles.
