Shrimp Asparagus Stir Fry: A Quick and Flavorful Asian-Inspired Meal
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 2 tablespoon vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 red bell pepper, sliced
- 1 cup snap peas, trimmed
- 3 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 1 tablespoon water
- Salt and pepper to taste
Instructions
1. In a small bowl, mix the cornstarch with the water and set aside.
2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
3. Add the shrimp to the hot oil, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp and set aside.
4. In the same skillet, add the garlic and ginger; sauté for 30 seconds. Then, add the asparagus, bell pepper, and snap peas; stir-fry for 4-5 minutes until tender-crisp.
5. Return the shrimp to the skillet. Add the soy sauce and oyster sauce. Stir in the cornstarch mixture and cook for another 1-2 minutes until the sauce thickens.
6. Serve the Shrimp Asparagus Stir Fry hot over cooked rice or noodles. Garnish with sesame seeds and green onions, if desired.
