- 2 pound beef stew meat
- 1 1/2 pound baby potatoes, halved if large
- 6 tablespoon unsalted butter, melted
- 6 garlic cloves, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Spray your slow cooker with cooking spray to prevent sticking. Arrange the baby potatoes in an even layer in the bottom of the slow cooker. Sprinkle them lightly with salt and pepper.
- In a large bowl, toss the beef stew meat with the smoked paprika, dried thyme, garlic powder, onion powder, salt, and black pepper until the meat is evenly coated. Scatter the seasoned beef over the potatoes in the slow cooker.
- In a separate bowl, whisk together the melted butter, minced garlic, Worcestershire sauce, and beef broth. Pour this mixture evenly over the beef and potatoes in the slow cooker.
- Cover the slow cooker and let it cook on low for 6-8 hours or on high for 3-4 hours until the beef is fork-tender and the potatoes are cooked through.
- Once cooking time is up, gently stir the contents of the slow cooker to ensure the beef and potatoes are evenly coated in the garlic butter sauce. Garnish with fresh chopped parsley if desired. Serve with crusty bread to soak up the sauce.
Notes
Store any remaining portions in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop until heated through.
