Ingredients

  • 2 lbs beef stew meat (chuck roast or sirloin)
  • 1 1/2 lbs baby potatoes, halved (or diced if using full-sized potatoes)
  • 4 tbsp unsalted butter, melted
  • 4 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 1/4 cup beef broth
  • Fresh parsley, chopped (optional, for garnish)

Instructions

1. Begin by cutting the beef into bite-sized chunks if they’re not pre-cut. For the potatoes, halve the baby potatoes for even cooking throughout.

2. In a large bowl, toss the beef and potatoes with the melted butter, minced garlic, Italian seasoning, paprika, salt, and black pepper until everything is evenly coated and deliciously seasoned.

3. Add the seasoned beef and potatoes to your slow cooker, then pour the beef broth around the edges to keep everything moist during the long, slow cooking process.
