- 2 cup baby potatoes
- 1 packet onion soup mix
- 4 cloves garlic, minced
- 1/2 cup butter
- 1 cup beef broth
- 1/4 cup Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Spray the inside of your slow cooker with nonstick cooking spray.
- Add the beef stew meat and baby potatoes to the prepared slow cooker, layering them evenly.
- Sprinkle the onion soup mix, garlic powder, onion powder, salt, and black pepper over the meat and potatoes. Add the minced garlic and stir gently.
- Pour the beef broth and Worcestershire sauce over the ingredients, ensuring everything is covered. Place the butter pats on top.
- Cover the slow cooker and cook on LOW for 6-8 hours or on HIGH for 4-5 hours, stirring occasionally until the beef is fork-tender and the potatoes are cooked through.
- Serve hot, garnished with fresh parsley if desired.
Notes
For a lighter option, use low-sodium beef broth and replace some butter with olive oil. You can also serve over cauliflower rice for a healthier meal.
