- 4 pieces boneless skinless chicken thighs
- 1 cup long grain white rice, uncooked
- 2 1/4 cup low sodium chicken broth
- 1 lemon, juiced and zested
- 2 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Start by seasoning the chicken thighs with salt, pepper, onion powder, and paprika. Heat the olive oil in a skillet over medium-high heat and sear the chicken for 2-3 minutes per side until golden brown. Set the seared chicken aside.
