  • 4 pieces boneless skinless chicken thighs
  • 1 cup long grain white rice, uncooked
  • 2 1/4 cup low sodium chicken broth
  • 1 lemon, juiced and zested
  • 2 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Start by seasoning the chicken thighs with salt, pepper, onion powder, and paprika. Heat the olive oil in a skillet over medium-high heat and sear the chicken for 2-3 minutes per side until golden brown. Set the seared chicken aside.
  2. Add the uncooked rice to the bottom of the slow cooker. Top it with the minced garlic, lemon zest, lemon juice, oregano, thyme, and chicken broth. Stir everything together to combine.
  3. Place the seared chicken thighs right on top of the rice mixture in the slow cooker.
