Ingredients
- 2–3 pound boneless chicken breasts or thighs
- 2 cup corn (frozen, canned, or fresh grilled)
- 4 ounce cream cheese, cubed
- 1/3 cup cotija cheese or feta
- Juice of 1 lime
- 2 garlic cloves, minced
- 1/2 teaspoon chili powder
- 1/2 teaspoon smoked paprika (optional)
- 1/2 teaspoon onion powder (optional)

Instructions
1. Prepare the Slow Cooker: Start by placing the chicken breasts in the bottom of the slow cooker.
2. Add the Ingredients: Next, top the chicken with the corn, cubed cream cheese, cotija cheese, lime juice, minced garlic, chili powder, and any optional seasonings you’d like to include.
3. Cook to Perfection: Cover the slow cooker and set it to cook on low for 4-5 hours or high for 2-3 hours, until the chicken is tender and cooked through.
4. Shred the Chicken: Once the cooking time is up, remove the chicken from the slow cooker and use two forks to shred it into bite-sized pieces. Return the shredded chicken to the slow cooker and stir everything together until the mixture is creamy and well combined.
5. Finish and Serve: Garnish the Slow Cooker Street Corn Chicken with fresh cilantro and a sprinkle of extra cotija cheese, if desired. Serve the dish over rice, in warm tortillas or taco shells, or alongside tortilla chips for dipping.
